Blue Cheese, Beef & Broccoli Bake
|For the beef:|
|3 tbsp coconut oil|
|500g beef mince|
|70g tomato paste|
|2 tsp dried rosemary|
|1 tsp paprika|
|½ cup homemade beef stock|
|himalayan salt and black pepper|
|For the topping:|
|150g blue cheese, crumbled|
|1 cup sour cream|
|2 spring onions, chopped|
|1 head broccoli, cut into florets, blanched and well drained|
|tomato salad, to serve|
- For the beef: Heat the coconut oil in a pan and cook the mince until browned. Stir in the tomato paste and rosemary and cook for 2 minutes, then add the paprika and stock, season well and simmer gently for 5–7 minutes.
- For the topping: Stir 100g blue cheese, the sour cream and spring onion in a bowl and season.
- Preheat the oven to 190ºC and grease an ovenproof dish. Place the beef and broccoli florets in the dish, pour the cheese mixture over and top with the remaining blue cheese. Bake for 30 minutes or until it is golden and bubbling.
- To serve: Serve hot with a tomato salad.
