Crispy Lamb Ribs with a Fresh Herb Sauce

Ingredients

1kg lamb ribs
5g fresh thyme
lemon wedges
2 crushed garlic clove
1 1/5cups beef stock (homemade)
1 tbsp fresh lemon juice
Himalayan salt
freshly ground black pepper
5g fresh parsley
5g fresh coriander
5g fresh oregano
1 spring onion
1/3 cup extra virgin olive oil

Method

  1. Preheat the oven to 180°C. Line a baking tray with foil, top with the ribs, stock, fresh thyme, the juice of the lemon and garlic, and season well. Cover with a second piece of foil, seal the edges together by crimping the foil to form a parcel.
  2. Roast for 35 minutes. Remove the baking tray from the oven and remove the covering foil. Increase the oven temperature to 220°C, return the tray to oven and roast the ribs until crispy and golden.
  3. For the herb sauce: Chop the coriander, parsley, oregano and spring onion and place in a bowl, stir in the tablespoon of lemon juice and then whisk in the olive oil. Season well.
  4. To serve: Serve ribs hot, topped with herb sauce and accompanied by lemon wedges.
