Ingredients

4 medium aubergines
1/3 cup extra virgin olive oil
coarse salt
2 tbsp coriander seeds
2 tbsp cumin seeds
1 tbsp tahini
1/3 cup greek yoghurt
1 garlic
1 tbsp lemon
2 tbsp hot water
Himalayan salt
freshly ground black pepper
75g pomegranate seeds
20g coriander seeds
1 red onions
5g fresh basil

Method

  1. Preheat the oven to 180C. Slice aubergines into 1 cm discs and place in a colander. Sprinkle with coarse salt; allow to stand for 20 minutes. Rinse and pat dry with paper towel.
  2. Place the aubergine slices on a baking tray, drizzle with the olive oil and sprinkle with cumin and coriander. Roast for 20–30 minutes. Remove and set aside.
  3. For dressing: Combine tahini, greek yoghurt, crushed garlic, hot water and fresh lemon together in a bowl, stir well, season and drizzle with olive oil. (Thin dressing down with a little extra hot water if necessary.)
  4. To serve: Place aubergine on a serving platter, toss with pomegranate seeds, coriander, basil leaves and thinly sliced red onion. Drizzle with dressing and serve immediately.
