Fragrant Pork Burgers In Lettuce Leaves

Fragrant low-carb pork burgers in lettuce leaves with coleslaw

Serves 4

Ingredients

For the patties:
500g pork mince
5g fresh coriander, chopped
2 spring onions, finely chopped
1 tbsp Thai 7-spice mix
1 green or red chilli, finely chopped
Himalayan salt and white pepper
3 tbsp coconut oil, for frying
For the coleslaw:
1 baby green cabbage, finely shredded
2 spring onions, chopped
5g fresh coriander, chopped
1/4 red onion, finely sliced
2 tbsp double cream yoghurt
1/3 cup low-carb mayonnaise
2 tsp Dijon mustard
Himalayan salt and white pepper
For the topping:
8 butter lettuce leaves
1 tsp paprika, to sprinkle
low-carb chutney, to serve
lemon wedges, to serve

Method

  1. For the patties: Place the pork mince, coriander, spring onion, Thai spice mix, and chilli in a bowl. Season and stir to combine. Form the mixture into 4 patties and set them aside.
  2. For the coleslaw: Place the cabbage, spring onion, coriander, red onion, yoghurt, low-carb mayonnaise and mustard in a bowl. Season and stir well to combine.
  3. Heat the coconut oil in a pan. Fry the patties on both sides until they are golden and cooked all the way through. Set them aside.
  4. To assemble: Place 4 lettuce leaves on a board or tray. Place a patty on top of each leaf, followed by a couple of spoons of coleslaw and another lettuce leaf. Sprinkle paprika on top.
  5. To serve: Serve the burgers with any remaining coleslaw, low-carb chutney and lemon wedges on the side.
